Turkey Curry Appetizers

Chopped turkey, cream cheese, sharp cheddar cheese, scallions, lime zest, mango chutney, curry powder, ground ginger, and salt combined in food processor to create smooth mixture. Turkey mixture is rolled into small bowls and rolled in finely chopped toasted almonds and coconut. Appetizers are chilled before serving to blend flavors.

Ingredients -
1 (8 ounces) package Cream Cheese, softened
3 cups finely chopped Roast Turkey
1-1/2 cups shredded Sharp Cheddar Cheese
3 Scallions, trimmed and finely minced
2 teaspoons Fresh Lime Zest
1/2 cup Mango Chutney
2 teaspoons Curry Powder
1 teaspoon Ground Ginger
Coarse Salt, to taste
1 cup Slivered Almonds, lightly toasted
1 cup Shredded Coconut, lightly toasted
 
Preparation:

1. Add toasted almonds and toasted coconut to food processor bowl. Pulse until almonds are finely chopped.

2. Spoon the almond mixture onto plate.

3. Add turkey to food processor. Pulse until well chopped.

4. Add cream cheese, sharp cheddar cheese, scallions, lime zest, mango chutney, curry powder, ground ginger, and salt to food processor.

5. Pulse until almost smooth.

6. Roll turkey mixture into balls, about 1 inch in diameter.

7. Roll turkey balls in toasted almond and coconut mixture.

8. Place appetizers on serving platter, cover with plastic wrap.

9. Refrigerate at least 1 hour before serving.

Chutney

Chutneys are made by stewing fruits and vegetables in a vinegar, sugar, and spice sauce. The extended cooking times enhances flavors, and softens textures.

Scallions

Scallions are immature yellow onion bulbs. The young, slender onion has a white bulb, a light green stem with dark green shoots. The scallion is mild in flavor. Trim the ends of the scallion and the remaining white and green parts are edible.
