Roast Chicken with Curry Rub Lemon and Yogurt

Roasting chicken rubbed with mixture of curry powder, salt, ground ginger, cumin, lemon juice and plain yogurt. Chicken roasted until cooked through about 2 hours. Allowed to rest before carving.

Ingredients -
Rub:
2 tablespoons Curry Powder
1-1/2 teaspoons Salt
1 teaspoon Ground Ginger
1 teaspoon Cumin
2 tablespoons Fresh Lemon Juice, reserve lemon after juicing
1/4 cup Plain Yogurt

1 (6 pound) Roasting Chicken, skin removed
Garlic Flavor Cooking Spray
 
Preparation:

1. Preheat the oven to 350 F.

2. Add curry powder, salt, ground ginger, cumin, lemon juice and plain yogurt to a small bowl. Stir to combine.

3. Place freshly juiced lemon in cavity of roasting chicken.

4. Tie legs together and tuck wing tips under back.

5. Rub chicken with curry powder mixture.

6. Line roasting pan with foil. Spray wire rack with nonstick garlic flavor cooking spray.

7. Place roasting chicken on wire rack in roasting pan and bake 2 hours, or until cooked through, spraying every 30 minutes with garlic cooking spray.

8. Transfer to a cutting board and untie chicken legs.

9. Let chicken rest 10 minutes before carving.

Ground Ginger

Ground ginger can be found in most supermarket spice sections. Dried ginger has a delicate flavor in comparison to the aromatic, robust flavor of fresh ginger.

Cumin

Cumin seeds can be purchased in whole or ground form. Available in jars, the spice should be stored away from light, in a dry location.
