Indian Spiced Spinach Dip

Dip prepared from avocado flesh, baby spinach leaves, fresh lime juice, crushed garlic, curry powder, garam masala, coarse salt and Greek Yogurt. Dip is garnished with diced tomatoes and served with raw vegetables for dipping.

Ingredients -
1 ripe Hass Avocado, halved, pitted and flesh removed
1 (5 ounces) bag Baby Spinach Leaves
2 tablespoons Fresh Lime Juice
1 Garlic Clove, crushed with a press
1 teaspoon Curry Powder
1 teaspoon Garam Masala
1/4 teaspoon Coarse Salt
1 cup Non-Fat Plain Greek Yogurt
Plum Tomato diced for garnish

Vegetable Dippers:
Baby Carrots
Red, Yellow and Orange Bell Pepper strips
Fresh Fennel sticks
Cucumber slices
Radishes, trimmed
 
Preparation:

1. Add avocado flesh, baby spinach leaves, fresh lime juice, crushed garlic, curry powder, garam masala, and coarse salt to food processor.

2. Process until mixture is smooth.

3. Transfer spinach dip to a medium bowl. Stir in yogurt until well blended.

4. Garnish with diced tomato.

5. Serve with raw vegetables for dipping.
