Curried Turkey Salad

Cooked turkey, seedless red grape halves and chopped celery tossed with a mixture of real mayonnaise, fresh lemon juice, curry powder, coarse salt, and white sugar. Salad is chilled, tossed with salted peanuts, and served cold.

Ingredients -
3 Cups Cubed Cooked Turkey
1 1/2 Cups Seedless Red Grapes, halved
4 Celery Ribs, chopped
2/3 Cup Mayonnaise
2 Tablespoons Lemon Juice
1 Teaspoon Curry Powder
1/2 Teaspoon Sea Salt
1 Teaspoon White Sugar
1/2 Cup Salted Peanuts
 
Preparation:

1. Combine the turkey, grapes and celery in a large bowl.

2. Combine the mayonnaise, lemon juice, curry powder, salt and sugar in a small bowl.

3. Pour the mixture over the turkey, grapes and celery mixture.

4. Toss to coat.

5. Cover and refrigerate for 2 hours.

6. Just before serving, stir in the peanuts.

Curry Powder

Spices are usually dry roasted before becoming part of curry powder to enhance their flavor. In addition to the availability of curry powder in your supermarket, you may also be able to find curry pastes.

A mixture of oil and egg yolks, mayonnaise has a pleasant, smooth texture and neutral taste that lends itself well to seasoning and flavoring.
