Chicken salad made with cooked chicken, mango, onion, green onion, and bell pepper. Mixture is tossed with mayonnaise, and toasted pecans, and served on a bed of lettuce.
Ingredients -
3-4 cups Cooked Chicken Breast, chopped
1/2 cup Mayonnaise
1 ripe Mango, peeled and chopped
2 Green Onions, chopped
½ Red Bell Pepper, chopped
1/3 cup Toasted chopped Pecans
1/4 teaspoon each Salt and Fresh Ground Black Pepper
8 pieces full Lettuce Leaves
Lime wedges
Preparation:
1. Add chopped chicken breast, mayonnaise, mango, green onion, red bell pepper, toasted pecans, salt and pepper.
2. Place lettuce leaves on plates. Spoon salad over lettuce.
3. Garnish with lime wedges.
