Corn Curry

Wonderful spicy side dish. Fresh corn, green pepper, and onion served in a butter, sour cream and curry powder sauce. Seasoned to taste with salt and pepper.
Ingredients -
3 tablespoons Butter
1-1/2 to 2 cups Fresh Whole Kernel Corn from the Cob
2 tablespoons chopped Green Pepper
2 tablespoons chopped Onion
1/4 to 1/2 teaspoon Curry Powder
1/2 cup Dairy Sour Cream
Salt and Pepper
 
Preparation:

1. Add butter to skillet and melt over low heat.

2. Add whole kernel corn, green pepper, and onion.

3. Stir in curry.

4. Cover and cook 8-10 minutes.

5. Stir in sour cream.

6. Season with salt and pepper.

7. Stir constantly until heated through.

8. Serve hot.

Vegetable Preparation
Vegetable preparation almost always starts with rinsing or washing. Most vegetables only require a quick rinse under cool running water. Few require additional scrubbing.

Leafy Greens
Once washed, shake off as much excess moisture as possible. Salad spinners are perfect for the task. Once removed from the spinner, place the greens on paper towels to catch the last of the water. The dried greens will stay crisper longer, and accept dressings better.
