Chicken breasts in a chicken curry sauce served over hot cooked rice.
Ingredients -
3 Boneless, Skinless Chicken Breast Halves, cut into thin strips
1/2 cup Chicken Broth
1 (10 ounces) can Cream of Chicken Soup
1 Onion, coarsely chopped
1 Sweet Red Bell Pepper, julienned
1/4 cup Golden Raisins
1-1/2 teaspoons Curry Powder
1/4 teaspoon Ground Ginger
Preparation:
1. Add chicken strips, chicken broth, cream of chicken soup, onion, red bell pepper, golden raisins, curry powder, and ground ginger to crockpot.
2. Cover and cook on LOW 4 hours.
3. Serve chicken curry over hot cooked rice.

Not all curries are hot. Curries may be mild, medium or hot. Add coconut milk to a hot curry to bring the temperature down to medium or mild.

Skinning A Chicken Breast
To skin a chicken breast, place the breast on a work surface, skin side up. Using your fingers, peel the skin back and tear off. Trim away remaining skin and visible fat with a sharp knife.
