Baked Curried Fruit

Lovely fruit dish perfect for any occasion. Sweet fruit mix of pineapple, apricot, peach, Mandarin oranges, and pears tossed in curry sauce.
Ingredients -
1 (14-1/2 ounces) can Sliced Peaches
1 (15 ounces) can Mandarin Oranges
1 (14-1/2 ounces) can Sliced Pears
1 (20 ounces) can Pineapple Chunks
1 (15 ounces) can Apricot Halves
3 tablespoons Cornstarch
3/4 cup packed Brown Sugar
1/4 cup Butter
3/4 cup Dry Sherry
2 teaspoons Curry Powder
 
Preparation:

1. Preheat oven to 350 F.

2. Spray a small casserole dish with non-stick spray.

3. Drain the canned fruit of juices and place in the casserole dish.

4. In a small saucepan, combine the cornstarch, brown sugar, butter, sherry and curry powder.

5. Stir to blend.

6. Cook the sauce mixture over low heat until it thickens.

7. Pour sauce over fruit. Toss to coat.

8. Bake 30 minutes.
