Curry Recipes

Curry is a broad term describing dishes prepared in many different cuisines, highlighted by the use of distinctive spices. Chicken Curry
Ingredients -
2 tablespoons Vegetable Oil
2-1/2 pounds Chicken Breast Halves or Thighs
1/2 teaspoon Salt
1 medium Onion, chopped (1/2 cup)
2 tablespoons Water
1 cup Sour Cream
2 teaspoons Curry Powder
1/8 teaspoon Ground Ginger
1/8 teaspoon Ground Cumin
1/2 cup Papaya-Apricot Chutney
6 cups Hot Cooked Rice
Preparation:

1. Heat vegetable oil in large skillet over medium high heat.

2. Add chicken pieces to skillet. Cook 15 minutes, turning occasionally.

3. Drain off all chicken fat from skillet.

4. Season chicken with salt.

5. Reduce heat to low.

6. Add chopped onion and water to skillet with chicken.

7. Cover and simmer 20 minutes.

8. Remove chicken to plate. Cover with foil to keep warm.

9. Pour liquid from skillet into small bowl and skim off excess fat.

10. Measure ¼ cup of reserved liquid and return to skillet.

11. Stir in sour cream, curry powder, ground ginger and ground cumin.

12. Heat, stirring constantly, until heated through.

13. Pour sauce over chicken pieces.

14. Serve chicken with apricot chutney and hot cooked rice.
